asparagus-and-pea-risottoWelcome to 2017!  We know it’s easy to overindulge during the holidays, which is why in January the most common resolution is to eat healthier.  A really simple way to start is by looking at your plate and making sure that half of it is always filled with fruits and veggies.  The best way to do that is with some absolutely delicious side dishes.  Here are a few of our favourite new side dishes to fill half your plate!

Asparagus Hollandaise from Ambassador Chef Michael Smith:  Asparagus is healthy and delicious.  Adding hollandaise sauce transforms it into the richest, silkiest side dish around!

Roasted Pineapple and Sweet Potato from Produce Made Simple: This is a simple dish to prepare and is sweet and hearty!

Asparagus and Pea Risotto: Creamy risotto is the perfect side dish to chicken, fish or steak.

Harvest Salad with Apple Cider Vinaigrette from Ambassador Chef Michael Smith: This salad celebrates the abundance of harvest with crunchy croutons, spicy seeds and colourful cranberries.

Kale, Brown Rice and Butternut Salad:  Colorful and Seasonal, this great salad is from friend Laurie Barker Jackman.

Roast Parsnips with Pumpkin Seed Green Onion Pesto: You’ll be a star when you serve these perfect roasted parsnips.
