Les traditionnelles soupes de l\u00e9gumes sont un moyen tr\u00e8s simple de servir tout plein de l\u00e9gumes savoureux sur la table en un rien de temps (et de les dissimuler \u00e0 ceux qui n\u2019en sont pas tr\u00e8s friands). Vous finirez peut-\u00eatre par d\u00e9couvrir une table pleine d\u2019amoureux des l\u00e9gumes. R\u00e2per les l\u00e9gumes durs et couper les autres en petits morceaux.<\/p>\n<p>Dans une marmite, faire fondre le beurre \u00e0 feu moyen-vif. Ajouter les oignons et l\u2019ail et m\u00e9langer jusqu\u2019\u00e0 ce que les oignons ramollissent. Maintenir le feu assez chaud pour les faire gr\u00e9siller, mais sans les faire br\u00fbler. Ajouter le l\u00e9gume choisi et verser le bouillon. Faire mijoter lentement et de mani\u00e8re constante. Laisser mijoter, en remuant de temps \u00e0 autre pour en r\u00e9v\u00e9ler toutes les saveurs, pendant environ 20\u00a0minutes, juste assez pour que les l\u00e9gumes ramollissent, mais pas trop, pour ne pas en \u00f4ter le go\u00fbt. \u00c0 la derni\u00e8re minute, ajouter votre assaisonnement. Assaisonner avec du sel et du poivre.<\/p>\n<p>R\u00e9duire le tout en pur\u00e9e \u00e0 l\u2019aide de votre m\u00e9langeur \u00e0 main, en inclinant la marmite pour atteindre le fond. Continuer jusqu\u2019\u00e0 l\u2019obtention de l\u2019\u00e9paisseur souhait\u00e9e. Insister pour obtenir un velout\u00e9.
