Pour r\u00e9duire la quantit\u00e9 d&rsquo;huile qu&rsquo;absorbera l&rsquo;aubergine pendant la cuisson, la saler et la laisser d\u00e9gorger pendant 30 min. Rincer et \u00e9ponger, puis cuire au four ou griller jusqu&rsquo;\u00e0 tendret\u00e9.
