Ingredients

  • 1 box shrimp skewers Compliments Balance chili Lime
  • 1 cup green beans trimmed
  • 1 pkg spaghetti whole wheat
  • 1/4 cup olive oil extra virgin
  • 1 cup red onion sliced
  • 4 cloves garlic minced
  • 1/2 tsp hot pepper flakes
  • 1 1/2 cup red peppers sliced
  • 1 1/2 cup yellow peppers sliced
  • 1 1/2 cup green peppers sliced
  • 3 tbsp lime juice
  • 1/4 cup basil fresh, lightly packed, torn
  • 4 wedges lime

Instructions

  • Prepare shrimp according to package directions.
  • In a large pot of boiling salted water, cook beans until tender-crisp, about 2 minutes. Remove to colander and rinse with cold water until cool. Set aside.
  • Add pasta to boiling water and cook until tender but firm, about 10 minutes. Drain, set aside.
  • Meanwhile, heat half the olive oil in a large skillet over medium-high heat. Add onion, garlic and hot pepper flakes and sauté until onions are tender, about 2 minutes.
  • Add the peppers and the beans and sauté for 2 minutes.
  • Add cooked pasta and lime juice with 2 tbsp (30 mL) of water, cook until heated through, about 2 minutes. Add basil and remaining olive oil, toss.
  • Serve in bowls topped with shrimp skewers and lime wedges.
