Puncture holes in the sweet potato. Microwave on high for 5-6 minutes.
In a large bowl, mash the sweet potato.
In a separate bowl, mix together peanut butter, maple syrup, and cocoa powder. When thoroughly mixed, fold in oats.
Add this mixture to the mashed sweet potato and mix well. Fold in chocolate chips.
Roll into 12 balls and chill.
