Mediterranean Tuna Salad
This is a delicious no-cook Mediterranean meal. It can be ready in minutes with your pantry staples and is oh-so-good-for-you!

Dijon mustard

Lemon
juiced plus zest

Olive oil

Cherry Tomatoes
halved

Cucumber
chopped
1/2
Red Pepper
chopped

Radishes
chopped

Olives
chopped

can
Chick peas
drained and rinsed
1
can
White tuna
drained
Instructions
Whisk the mustard, lemon juice and zest, and olive oil in a large bowl.
Add all other ingredients and toss to coat.
Serve on top of a salad, in a whole grain wrap or sandwich, or lettuce boats!
