Roasted Orange Ginger Asparagus
Ginger and garlic are a wonderful combination for asparagus. Once roasted, the fresh juice and flavour of the orange makes this a mouthwatering side dish.

Asparagus
trimmed

tbsp
Extra Virgin Olive Oil

tbsp
Ginger
fresh, minced

cloves
Garlic
minced
1/2
tsp
Orange Zest
grated
1/2
tsp
Salt
Pinch of Pepper

Orange
peeled and chopped
Instructions
Cut asparagus in half (if desired) and toss wtih oil, ginger, garlic, orange zest, salt and pepper. Spread onto parchment paper lined baking sheet.
Roast in 425 F (220 C) oven for about 8 minutes or until tender but still firm.
Sprinkle oranges over top and let stand 2 minutes before serving.
