Cherry and Blueberry Salad with Cinnamon Candied Cashews and Goat Cheese

Ingredients

For the Nuts

  • 1/2 cup Raw Cashews
  • 1 1/2 tbsp Maple Syrup
  • 1/2 tsp Vanilla
  • Pinch of Salt

For the Dressing

  • 2 tbsp Avocado Oil
  • 2 tbsp Balsamic Vinegar
  • 1/2 tsp Tahini
  • Salt and Pepper

To Assemble

  • 5 oz Spring Mix
  • 1/2 cup Blueberries
  • 1/2 cup Cherries Pitted and Halved
  • 2-3 tbsp Goat Cheese

Instructions

  • Candie the nuts, mix everything except the cashews together in a small bowl.
  • Over medium heat, toast the cashews until they’re fragrant.
  • Once the cashews are toasted, add the syrup mixture, stirring until excess liquid has candied onto the nuts. Pour on a piece of parchment paper to cool.
  • Make the dressing, whisk everything together in a small bowl until well combined. Assemble and serve.
