Ingredients

For The Sandwiches:

  • 4 Buns Ciabatta or Portuguese Buns Work Great
  • 2 Heirloom Tomatoes Sliced
  • 1 Fresh Mozzarella Ball Sliced
  • 2 Peaches Sliced
  • Homemade Arugula Pesto Recipe Below

Homemade Arugula Pesto:

  • 1 1/2 cups Arugula
  • 3/4 cup Fresh Basil
  • 1/2 cup Pumpkin Seeds
  • 1/2 cup Grated Parmesan
  • 1/2 cup Olive Oil
  • 4 Garlic Cloves
  • Zest of 1/2 Lemon
  • Juice of 1/2 Lemon
  • Pinch of Salt and Pepper

Instructions

  • In a food processor, combine arugula, basil, pumpkin seeds, Parmesan, garlic, lemon zest, lemon juice, salt, and pepper.
  • Blend while slowly drizzling in olive oil until smooth and creamy. Adjust seasoning if needed.
  • Slice the buns in half and toast lightly if desired. Spread a generous layer of pesto on the bottom half of each bun.
  • Layer with sliced tomatoes, peaches, and mozzarella.
  • Top with the other half of the bun.
  • Serve immediately as a refreshing and flavorful summer sandwich.
