Thai-inspired Broccoli Potato Soup

Ingredients

  • 2 tbsp Olive Oil
  • 1 Small Onion (or 1/2 large) Diced
  • 4 Garlic Cloves Minced
  • 2 tbsp Green Curry Paste
  • 2 Small Potatoes Diced
  • 1 Large Broccoli Head (or 2 small crowns) Chopped
  • 4 cups Vegetable Broth
  • Salt and Pepper To Taste
  • 1 Head of Kale Chopped
  • 1 Can (400ml) Coconut Milk
  • Juice of 1 Lime

Instructions

  • In a large pot, heat olive oil over medium heat. Add onion and cook for 5–7 minutes until soft. Add garlic and cook 2 more minutes.
  • Stir in green curry paste and cook for 1 minute.
  • Add potatoes and broccoli. Cook for 2 minutes to slightly char.
  • Add broth, season with salt and pepper, cover and simmer 20 minutes.
  • Stir in kale and cook uncovered for 10 more minutes, until wilted.
  • Use an immersion blender to blend until smooth.
  • Stir in coconut milk and lime juice. Simmer another 10 minutes.
  • Ladle into bowls and top with your favorite garnishes!
