Who doesn’t love pizza? These Mediterranean pizza stuffed peppers area fun way to eat more vegetables! They are loaded with marinara sauce, cheese,and tasty toppings like artichoke hearts, olives, and spinach. This recipe is easy enough for kids to help make as they can choose and add their preferred pizza toppings.
½cup (125ml)marinara sauceor homemade: tomato sauce, olive oil, oregano, and salt & pepper
½cup (125ml) fresh baby spinachrinsed
½cup (125ml)shredded mozzarella cheese
¼cup (60ml)ricotta cheese
1small jarof marinated artichoke hearts or about 8 small heart pieces sliced
¼cup (60ml)of black olives
Instructions
Preheat the oven to 400° F. Line a 9 x 12 inch baking dish with parchment paper.
Lay the peppers side down and cut down the middle, creating 2 cups per each pepper. Carefully remove the stem on the top half and place all bell pepper cups on the baking tray parchment.
Layer with marinara sauce, fresh baby spinach, mozzarella, ricotta, artichoke hearts, and olives.
Cook for 15-20 mins, or until peppers are cooked through.
