Pad Thai Spaghetti Squash

This recipe comes to us from Susan Sipos.

Ingredients

1 spaghetti squash
1 large onion
1 red bell pepper
mushrooms
300 grams of baked chicken breast (approximately 2 chicken breasts)
150 grams of shrimp

1/3 cup Light Coconut Milk
4 tablespoons of powdered peanut butter (I used PB2)
2 tablespoons Soy Sauce
1 tablespoon fish sauce
1 tablespoon red curry paste
1 teaspoon brown sugar
lime juice
ginger
garlic

Serves 4-6

• How To Prepare :

Baked the spaghetti squash and chicken breasts in the oven at 350F for 30-40 minutes.

While the squash is baking, finely dice and saute the onions, pepper and mushrooms in a frying pan on the stove. Add in shrimp.

Prepare the sauce on the side. I have used the basic proportions listed above and if it is a large spaghetti squash I may double the sauce.

Half the squash and let cool enough to start pulling out the squash strands and cube the chicken breasts. Add squash and chicken to the sautéed vegetables in the frying pan and add the peanut sauce. Mix until the sauce is evenly distributed throughout the spaghetti squash.

Each Serving is around 300 calories, 8 Fat, 24 Cabs, 33 Protein

Molasses and Chicken Salad

This recipe comes to us from Heyam Mohammad Amin Alhamawi

Ingredients:

480g cooked chicken
1 Avocado, diced
2 onions, chopped
45g sliced almonds
1 teaspoon garlic powder
3 tablespoons Date Molasses (Dates Syrup)
5 tablespoons Vegetable oil (as an example Canola Oil)
Salt, black pepper
2 teaspoon Apple vinegar
1 teaspoons Anise powder (it will give a strong and a unique taste)

• How To Prepare :

*In a large bowl, put the chicken, The Avocado, the onions, and the Almonds.
*In a small bowl, mix by a whisk the Date Molasses, the vinegar, the oil, and the Anise powder, and pour over the salad. Season with salt and pepper and mix well. After 10 minutes it will be ready to serve (the ten minutes is to marinate the ingredients by the salad sauce).
