What do you need to make this recipe?

1 cup quinoa, rinsed (You can swap this for couscous if you don’t have quinoa, just make sure you follow the cooking instructions on the package as it cooks much faster than quinoa)
1 cup vegetable broth (chicken or beef broth are also good)
1/2 tsp grated orange rind
1/2 cup orange juice
2 tsp canola oil
1 onion
2 cloves garlic
1 carrot
1 zucchini
1 each red and yellow pepper
1/2 tsp salt
1/4 tsp fresh ground pepper
