These delicious little treats are the perfect summer app to serve alongside your BBQ fare.

For the dressing:

  • ½ cup olive oil
  • 1/3 cup fresh lemon juice
  • 1 clove of garlic, pressed
  • 1 tbsp chopped parsley
  • 1 tsp dried oregano
  • Salt and pepper to taste

For the skewers:

  • 1 cup red grape tomatoes (slice if you feel they’re too large)
  • 1 cup yellow grape tomatoes (slice if you feel they’re too large)
  • ½ cup kalamata olives, pitted
  • 3 oz halloumi cheese
  • 16 mini cocktail wood skewers

Whisk together all dressing ingredients in a small bowl, set aside. On medium heat BBQ, sear the block of halloumi cheese until grill marks form, approximately 3 minutes per side. Once cheese has cooled slightly, chop into 1 inch cubes. Stack onto skewers, tomato, olive, tomato, cheese, tomato. Brush skewers with dressing, leaving some aside for dipping. Serves 6-8.
