Ingredients
For The Sandwiches:
- 4 Buns Ciabatta or Portuguese Buns Work Great
- 2 Heirloom Tomatoes Sliced
- 1 Fresh Mozzarella Ball Sliced
- 2 Peaches Sliced
- Homemade Arugula Pesto Recipe Below
Homemade Arugula Pesto:
- 1 1/2 cups Arugula
- 3/4 cup Fresh Basil
- 1/2 cup Pumpkin Seeds
- 1/2 cup Grated Parmesan
- 1/2 cup Olive Oil
- 4 Garlic Cloves
- Zest of 1/2 Lemon
- Juice of 1/2 Lemon
- Pinch of Salt and Pepper
Instructions
- In a food processor, combine arugula, basil, pumpkin seeds, Parmesan, garlic, lemon zest, lemon juice, salt, and pepper.
- Blend while slowly drizzling in olive oil until smooth and creamy. Adjust seasoning if needed.
- Slice the buns in half and toast lightly if desired. Spread a generous layer of pesto on the bottom half of each bun.
- Layer with sliced tomatoes, peaches, and mozzarella.
- Top with the other half of the bun.
- Serve immediately as a refreshing and flavorful summer sandwich.
