Instructions:

  1. Whisk together all the ingredients for the vinaigrette and set aside.
  2. Heat up the grill.
  3. Slice the zucchini into thin slices and lightly brush with olive oil. Grill on each side for 5-7 minutes. Set aside while you assemble salad.
  4. Wash and chop up your lettuce. Top with slices of onion and peas.
  5. Layer on the smoked salmon and grilled zucchini.
  6. Finish it off by drizzling the vinaigrette over the salad. Serve and enjoy!
