- 1 pack Harvest Fresh Kale Slaw
- 1 cup Quinoa cooked
- 1 can Black Beans drained and rinsed
- 1 ripe Mango peeled and chopped
- 1 Avocado sliced
- 1/2 cup Green Onions sliced
- 1 Red Bell Pepper
- 1/4 cup Cilantro chopped
- Salt and Pepper
- 3 tbsp Olive Oil
- 3 tbsp Lime Juice
- 1/2 tsp Cumin
- 2 tsp Honey
- 1/4 tsp Cayenne Pepper
- 1/4 tsp Ginger
- In a bowl, place Kale slaw, cooked quinoa, black beans, mango, avocado, green onions, red pepper, and cilantro.
- Prepare dressing, combining all ingredients in a small bowl, mix well.
- Pour dressing on top, mix well. Season with salt and pepper.
