  • 1 pack Harvest Fresh Kale Slaw
  • 1 cup (dry) Quinoa cooked
  • 1 ripe Mango peeled and chopped
  • 1 Avocado sliced
  • 1/2 cup Green Onions sliced
  • 1 can Black Beans drained and rinsed
  • 1 Red Bell Pepper
  • 1/4 cup Cilantro chopped
  • Salt and Pepper


  • 3 tbsp Olive Oil
  • 3 tbsp Lime Juice
  • 1/2 tsp Cumin
  • 2 tsp Honey
  • 1/4 tsp Cayenne Pepper
  • 1/4 tsp Ginger


  • In a bowl, place Kale slaw, cooked quinoa, black beans, mango, avocado, green onions, red pepper, and cilantro.
  • Prepare dressing, combining all ingredients in a small bowl, mix well.
  • Pour dressing on top, mix well. Season with salt and pepper.
