Ingredients
For the Nuts
- 1/2 cup Raw Cashews
- 1 1/2 tbsp Maple Syrup
- 1/2 tsp Vanilla
- Pinch of Salt
For the Dressing
- 2 tbsp Avocado Oil
- 2 tbsp Balsamic Vinegar
- 1/2 tsp Tahini
- Salt and Pepper
To Assemble
- 5 oz Spring Mix
- 1/2 cup Blueberries
- 1/2 cup Cherries Pitted and Halved
- 2-3 tbsp Goat Cheese
Instructions
- Candie the nuts, mix everything except the cashews together in a small bowl.
- Over medium heat, toast the cashews until they’re fragrant.
- Once the cashews are toasted, add the syrup mixture, stirring until excess liquid has candied onto the nuts. Pour on a piece of parchment paper to cool.
- Make the dressing, whisk everything together in a small bowl until well combined. Assemble and serve.
