Even kids who don’t like vegetables will love this tasty cheese-topped dish.

Instructions:

  1. Preheat oven to 425°F (218°C).
  2. Place cauliflower and broccoli in roasting pan or baking sheet.
  3. Drizzle with oil, salt and chili flakes (if using); bake, stirring twice until tender and browned, about 20 minutes.
  4. Toss with garlic and thyme, bake for 5 minutes.
  5. Squeeze lemon over vegetables and sprinkle Parmesan over top; return to oven and bake until cheese is melted, about 1 minute.
