Ingredients
- 2 tbsp Olive Oil
- 1 Small Onion (or 1/2 large) Diced
- 4 Garlic Cloves Minced
- 2 tbsp Green Curry Paste
- 2 Small Potatoes Diced
- 1 Large Broccoli Head (or 2 small crowns) Chopped
- 4 cups Vegetable Broth
- Salt and Pepper To Taste
- 1 Head of Kale Chopped
- 1 Can (400ml) Coconut Milk
- Juice of 1 Lime
Instructions
- In a large pot, heat olive oil over medium heat. Add onion and cook for 5–7 minutes until soft. Add garlic and cook 2 more minutes.
- Stir in green curry paste and cook for 1 minute.
- Add potatoes and broccoli. Cook for 2 minutes to slightly char.
- Add broth, season with salt and pepper, cover and simmer 20 minutes.
- Stir in kale and cook uncovered for 10 more minutes, until wilted.
- Use an immersion blender to blend until smooth.
- Stir in coconut milk and lime juice. Simmer another 10 minutes.
- Ladle into bowls and top with your favorite garnishes!
