Cozy bowls are made by assembling a variety of ingredients in one bowl. There is no single recipe to follow, so you can easily make one using ingredients you already have on hand. Bowls are also a practical way to use leftover ingredients from the day or two, and an excellent way to try new vegetables and fruits. Read on to find out how to build your own cozy bowl and the six vegetables to try this fall!
How to Build Your Own Bowl
Start With A Base
Grains like rice, wild rice, couscous, quinoa, and barley provide the foundation of a bowl. Their mild, neutral flavour allows veggies, proteins, and other ingredients in the bowl to stand out. They also absorb flavours from the other ingredients, helping bring the meal together while making it filling and satisfying.
Add Vegetables
If you want to eat more veggies, consider adding two varieties and gradually increase as you get comfortable. Aim to fill half your bowl with vegetables.
Roasted vegetables are well suited to fall bowls. Roasting root vegetables caramelizes their natural sugars, creating golden-brown edges and sweet, and savory flavours. Combining roasted veggies with fresh leafy greens or crunchy raw vegetables also adds colour and contrasting textures.

Include A Protein
Adding a protein-rich ingredient makes an ingredient-packed bowl nourishing, while adding flavour and texture. Many protein options are available from chicken, turkey, fish, and eggs to plant-based varieties such as edamame, tofu, beans, chickpeas, lentils, and more. Choose a protein that complements the flavours and textures of the other ingredients in your bowl.
Add A Dressing or Sauce
A dressing or sauce coats the ingredients, connecting them so that they taste like a cohesive meal rather than a collection of individual ingredients. It also adds moisture, making each bite softer and flavourful.
Adding a sauce in your bowl also enhances the overall flavour without overpowering the natural taste of the individual ingredients. Some examples of sauces that complement bowls’ ingredients include miso-ginger, balsamic dressing, sesame dressing, and apple cider vinaigrette.
Top The Bowl With Garnishes
Garnishes, such as fresh herbs, diced and dried fruits, nuts and seeds, add a finishing touch of flavour, colour and texture. For example, nuts and seeds offer a crunch that adds contrast with tender veggies and grains, while fresh herbs add a pop of colour. Garnishes can also highlight the overall flavour profile and make the bowl feel complete.
6 Fall Vegetable Favourites for Cozy Bowls
Seasonal vegetables like beets, heirloom carrots, parsnips, rutabaga, winter squash, and colourful potatoes are hearty, flavourful, and comforting in cooler weather. These varieties roast beautifully, bringing out their natural sweetness. Their firmness also holds up well to high heat, so they become tender on the inside without falling apart.
Since fall calls for warm, comforting meals, these vegetables are a delicious place to start, especially in cozy bowls.
Beets
Red, golden and striped beets add vibrant colour, and a subtly sweet, earthy flavour to bowls. They pair well with apples and oranges, lentils and chickpeas, feta cheese, walnuts and pumpkin seeds.
Try this bowl: Combine roasted beets with cooked barley pearls, cooked lentils and kale leaves. Finish the bowl with walnuts and maple-balsamic dressing.

Heirloom Carrots
While carrots are commonly associated with the colour orange, heirloom varieties could be purple, yellow, red, or white. Their vibrant colours elevate a meal, while their familiar flavour is similar to that of the conventional orange carrots.
Try this bowl: Use cooked quinoa as the base, boiled edamame as a protein. Fill the bowl with an equal amount of roasted heirloom carrots, shredded cabbage, and leafy greens. Drizzle the bowl with sesame or tahini dressing and dried cranberries for a creamy, crunchy, and mildly sweet combination.
Parsnips
Parsnips resemble pale-coloured carrots. When roasted, they develop a mildly sweet, earthy, and nutty flavour. Cut them into thin strips to make parsnip fries, or cube into bite-sized pieces for roasting.
Try this bowl: Place cooked brown rice at the bottom of the bowl. Then, add shredded cooked napa cabbage, baked firm tofu cubes, roasted parsnips, and roasted broccoli florets. Garnish the bowl with a sesame dressing that balances the sweetness and earthiness of roasted veggies, chickpeas, and grains.
Rutabaga
Rutabaga is a round root vegetable with a tan-coloured skin and a purple-tinged top. It has a mild flavour when eaten raw and becomes slightly sweet and earthy when cooked. You can roast, bake, boil, or mash this root vegetable. For a cozy fall bowl, cut it into small cubes and roast it with carrots, onions, and parsnips.
Try this bowl: Combine the roasted rutabaga, carrots, onion, and parsnips with cooked couscous, cooked beans, and sautéed cabbage. Garnish the bowl with diced apple, walnuts, and an apple-cider vinaigrette.

Winter Squash
You may associate butternut squash with winter squash; the winter squash family offers a variety of choices, including delicata, acorn, kabocha, Hubbard, and carnival. Each has a slightly different sweetness, texture, and appearance.
Delicata squash is an ideal addition to autumn bowls because its edible skin makes it easy to prepare and cook.
Try this bowl: Roast delicata squash in half-moon slices, and pair it with cooked wild rice, boiled edamame, sauteed shitake mushrooms, and leafy greens. Drizzle the bowl with miso-ginger dressing and sprinkle with sesame seeds.
Potato Varieties
In Canada, potatoes are harvested from late summer through fall.1 During the autumn months, you may find Yukon Gold, Russets, and red-skin potato varieties commonly available.
Russet potatoes are ideal for roasting; for contrasting colours and textures, try roasting a mixture of varieties. Leaving the skin on also adds additional fibre to the bowl.
Try this bowl: Roast a mixture of yellow, red, and purple potatoes, pair them with leafy greens and cooked lentils, drizzle with honey-mustard dressing, and finish with toasted sunflower seeds.
