Cream of Broccoli SoupDuring these cold winter months there is nothing more comforting than a warm bowl of soup.  Soups are a fantastic way to use up any leftover produce you have in a delicious and easy way.  Here are some of our favourites in honour of National “Home Made Soup” Day!

Head to Toe Broccoli Soup: The best way to get the most out of your produce is to use it all up! This easy broccoli soup is delicious and makes use of all parts of the broccoli.

Coconut Squash Soup: This creamy soup has a wonderful combination of coconut milk and squash. With the burst of green colour from the spinach this soup will surely make it into your weekly recipe rotation.

Roasted Fennel and Parsnip Soup: This thick and rich soup has a fresh flavour with a hint of licorice from the fennel. Roasting the vegetables softens their flavour and adds a unique taste to this elegant soup.

Vegetable and Barley Soup: Hearty chunky vegetables are a colourful match to Canadian grown barley. This soup will hit the spot this fall and winter to warm you up from head to toe.

Our Ambassador Chef Michael Smith had a great time with Honourable Yasir Naqvi, Honourable Jeff Leal, Honourable Dipika Damerla, and MPP Andrea Horwath creating custom soups and you can even customize your own!

Chinese Greens and Mushroom Soup: This take on miso soup is chock full of veggies and will hit the spot on a cold night. Simple enough to get the family to help chop the vegetables and enjoy the benefits when it’s all done. Darker miso will offer up a darker coloured broth. Look for it in health food and organic sections of grocery stores.

Rosemary Lentil Soup: The aroma of rosemary will fill your kitchen and get them running for a tasty soup to share. Serve up some crusty bread alongside to a heart-warming meal.Lentil Tomato Soup

Chunky Roasted Vegetable Soup: Roasting vegetables adds lots of flavour and you can combine a mixture of what is in your fridge. Try to use up all parts of the vegetables including the leaves for added fibre, colour and flavour.

Carrot and Squash Ginger Soup: This soul satisfying soup freezes beautifully so go ahead and make a few batches!
